Snow Much Fun

A couple of weeks ago we finally got a huge snow! Here we are again and as I am typing this it is snowing again! In a two week period we have received two snowfalls, and each snowfall has resulted in 5" or more each time!

These are some pics I took of the kids and the dogs enjoying our last snow storm.

I love when it snows. There is just something about fresh falling snow.

BBQ Chicken Pizza

I love pizza! It is one of my most favoritest foods(okay...I know it is not spelled right, but I love that word). Last week, I tried my hand at making homemade bbq chicken pizza and it turned out fabulous!

I hope you enjoy this recipe as much as I did putting it together!

Ingredients
Pizza crust
bbq sauce
chicken breasts
caramelized onions
shredded cheddar cheese
Self Rising Pizza Crust
2-1/2 Cups All Purpose Flour
2 tsp Baking Powder
1 tsp Salt
1 tsp Dry Active Yeast
3/4 Cup Water
1/4 Cup oil
In bowl combine flour, baking powder, salt, and yeast. Stir it up to distribute the salt and yeast evenly. Add the water and oil. You may need to add a teaspoon or more of water if the day is dry. Mix the dough until it forms a ball in the middle of the bowl. It should be a little stiffer than biscuit dough. Knead dough about 10 to 12 times and then form in a ball. Place the ball in the center of a 16" pizza pan or a 9x13 pan. Use your hands and a rolling pin to roll dough out into the pan. Press the dough into the pan until it is medium thickness. Cook crust on 400 degrees for about 8-10 minutes. Remove from oven.

Boil your chicken until it is done. You can use whatever kind of chicken that you want. I always use white meat because that is what my family likes. After your chicken is done boiling, take it out and allow it set and cool for just a  bit and then shred it.
Take an onion and slice it in half. Take each half and slice very thinly and place in a pan with a couple of tablespoons of butter on medium to low heat. Allow the onions to cook until they are translucent and begin to caramelize.

Now it is time to assemble the pizza!

Take your pre-baked crust and slather it with bbq sauce. Use the sauce of your choice(I prefer honey flavored). After slathering with bbq sauce, take the shredded chicken and add just a tad of bbq to it so that it does not dry out and then spread it evenly on your pizza crust. Sprinkle the shredded cheddar cheese on top and then scatter the onions on top of that. Place in a 400 degree oven for about 10-12 minutes or until the crust and toppings are done to your liking.

I am telling you, this pizza is awesome and it is a great way to use up leftovers in the fridge!

This week on I Heart Faces, our challenge was kisses. This is one of my favorite shots of Kayla and Puff. She took this one day and I just brushed it up some with my photo editing software.

Book Review: Love & War by John and Stasi Eldredge

What is it about your marriage that drives you crazy? What is it that you want in your marriage that you are not getting?
These were the two questions that kept popping up in my mind as I read this book. From the heated topic of sex, to the topic of "I am not good enough", all of that is covered in this book.

It is amazing to me that when I read a book by John and Stasi that I see the struggles in their marriage. I feel their pain as I have been through many of those same struggles in my own marriage. But in the end, they have beat divorce. They have stayed together. That to me is worth it all. Knowing that they are so transparent so that other people can learn from their mistakes is a wonderful and helpful tool.

I really can relate to Stasi as I struggle with the idea that I am not pretty enough or good enough for anything. I have felt that way most of my life and I still struggle with that. To know that I am not alone is great. There are others who struggle with this issue and they survive, they make it through.

ABOUT THIS BOOK

What the Eldredge bestsellers Wild at Heart did for men, and Captivating did for women, LOVE & WAR will do for married couples everywhere. John and Stasi Eldredge have contributed the quintessential works on Christian spirituality through the experience of men and the experience of women and now they turn their focus to the incredible dynamic between those two forces.

With refreshing openness that will grab readers from the first page, the Eldredges candidly discuss their own marriage and the insights they’ve gained from the challenges they faced. Each talks independently to the reader about what they’ve learned, giving their guidance personal immediacy and a balance between the male and female perspectives that has been absent from all previous books on this topic.   They begin LOVE & WAR with an obvious but necessary acknowledgement:  Marriage is fabulously hard.  They advise that the sooner we get the shame and confusion off our backs, the sooner we'll find our way through.

LOVE & WAR shows couples how to fight for their love and happiness, calling men and women to step into the great adventure God has waiting for them together. Walking alongside John and Stasi Eldredge, every couple can discover how their individual journeys are growing into a story of meaning much greater than anything they could do or be on their own.
